BERRY POWER OATMEAL
Ingredients
½ cup old-fashioned oats
1 cup low-fat milk or unsweetened almond milk
½ cup fresh blueberries
½ cup sliced strawberries
1 tbsp chia seeds
1 tbsp chopped walnuts or almonds
½ tsp cinnamon
1 tsp honey or maple syrup (optional)
Directions
Combine the oats and milk in a small saucepan.
Cook over medium heat for about 5 minutes, stirring occasionally, until creamy.
Stir in the cinnamon and chia seeds.
Transfer to a bowl.
Top with blueberries, strawberries and chopped nuts.
Add a small drizzle of honey or maple syrup if desired.

Ingredients

4 salmon fillets (about 4–6 oz each)

2 tbsp olive oil
-
3 cloves garlic, minced
-
1 fresh lemon
-
1 tsp dried Italian seasoning
-
½ tsp paprika
-
¼ tsp black pepper
-
¼ tsp salt
-
1 tbsp fresh parsley, chopped
-
Lemon slices for serving
Directions

Preheat oven to 400°F.
-
Place salmon on a lightly oiled or parchment-lined baking sheet.

Mix olive oil, minced garlic, juice from half the lemon, Italian seasoning, paprika, salt and pepper.

Brush the mixture generously over the salmon.
-
Place thin lemon slices over the fillets.
-
Bake for 12–15 minutes, or until the salmon reaches 145°F internally and flakes easily with a fork.

Sprinkle with fresh parsley and squeeze the remaining lemon over the salmon before serving.
LEMON GARLIC SALMON

CHICKPEA VEGGIE SALAD
Ingredients

1 can (15 oz) chickpeas, drained and rinsed
-
1 cup cucumber, chopped
-
1 cup cherry tomatoes, halved
-
½ cup red bell pepper, chopped
-
½ cup carrots, chopped or shredded
-
¼ cup red onion, finely chopped
-
2 tbsp fresh parsley, chopped
-
2 tbsp olive oil
-
2 tbsp fresh lemon juice
-
1 clove garlic, minced
-
½ tsp dried oregano
-
¼ tsp black pepper
-
¼ tsp salt
Directions

Add chickpeas, cucumber, tomatoes, bell pepper, carrots, red onion and parsley to a large bowl.

In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt and pepper.

Pour the dressing over the chickpea mixture.
-
Toss until everything is evenly coated.

Refrigerate for 15–30 minutes before serving for the best flavor.

1 ripe banana

1 cup blueberries, fresh or frozen

1 cup unsweetened almond milk or low-fat milk

½ cup plain Greek yogurt

1 tbsp chia seeds
-
½ tsp cinnamon
-
½ cup ice (optional)
Directions

Add the banana, blueberries, milk, Greek yogurt and chia seeds to a blender.

Add cinnamon and ice, if desired.
-
Blend until smooth and creamy.
-
Add a little more milk if you prefer a thinner smoothie.
-
Pour into a glass and serve immediately.
